【摘要】:1ThisEuropeanstandardspecifiesthesafetyandhygienerequirementsforthedesignandmanufactureofvegetablepeelersusedinthecommercialandinstitutionalcateringindustry,andinfoodshops.Themachinesconcernedbythisstandardaredesignedtopeeldifferentsortsofvegetablesandtuberssuchaspotatoes,carrots,salsify,turnips,celeryandonions.Thestandardislimitedtomachineswherethemaximumcapacityis50kg.Themachinesarenotintendedtobemovedduringoperation.Therotatingplatemixestheproductunderappropriateconditionssothatthedesiredoperationiscarriedoutontheentireload.Thisoperationcanbe:—theabradingofthesurfaceofthevegetableortuber;—thecuttingoffineparticlesofskinifthefittingisoftheblade-type;—grating,anoperationwhichissimilartoabrading;—scrapingorcleaningwithabrush,rubbercoatingorcastironsurface.Machinessubjecttothisstandardusewatercirculationtocarrywastetothewasteoutlet.Theundersideoftheplateissometimesdesignedwithraisedpartswhichspeedupthedischargeofthewastewater.ThisEuropeanstandardapplieswhensuchmachinesareusedtooperateundertheintendedconditionsofuseasdefinedin3.12ofEN292-1:1991andstatedintheinstructionhandbook(see7.1),includingcleaning,removaloffoodblockagesandloading,andinstallation,maintenance,anddisposalofwastes.Machinescoveredbythisstandardarenotintendedtobecleanedbyhighpressurewaterjets.2ThisEuropeanstandarddoesnotapplytodomesticmachines.Vegetablepeelershavenothingincommonwithmeatderindingmachines(whicharedealtwithinprEN12355),bothfromtheirdesignandusestandpoint.3ThisEuropeanstandardcoverssignificanthazardsatsuchmachines,asidentifiedbyriskassessment(seeEN1050),whicharelistedinclause4ofthisstandard.4Noiseisnotconsideredtobeasignificanthazardforvegetablepeelers.Thisdoesnotmeanthatthemanufacturerofthemachineisabsolvedfromreducingnoiseandmakinganoisedeclaration.5ThisEuropeanstandarddoesnotdealwiththevibrationshazard.6ThisEuropeanstandardappliesprimarilytomachineswhicharemanufacturedafteritsdateofissue.7Ithasbeenassumedinpreparingthisstandardthatthevegetablestobeprocessedhavenoforeignbodies,e.g.stones.
